Actually there is a large range of choices for green web hosting. Not just these avacado lovers you pointed to. I've made a fairly long list of them (linked above) and came away with an observation. In most cases they are relying on some kind of carbon credit purchase to offset their energy use. A lot depends on how well they audit and understand their energy and resource use, and a lot depends on whether the source of their carbon credits is reputable. If carbon credits aren't tied to actual carbon reduction then it really is just a modern form of indulgences. Also the focus on carbon abatement ignores other pollutants that come from using and building computers. Is anybody auditing those other pollutants?
